Introducing YY*->IST (Apricot Vanilla Milkshake IPA, 6%)


It’s been a little while since the last release in our travel-inspired series of Milkshake IPAs, YY*. During the last half of 2018, our focus for the series was in introducing new fruit varieties that we hadn't worked with before, always thinking of ways to introduce new exciting flavour profiles that would pair nicely with the expected creaminess and sweetness of the MIPA style. For this first YY* release of 2019, we are revisiting a fruit that we’ve loved working with since our first year: apricot. We first brewed with apricot back in the Summer of 2016, when we introduced our first batch of Wizard of Gose (Apricot Sour, 4.2%), a beer that has been a staple of ours for over two years. This time around we’re working with apricots in a totally different way. Rather than trying to raise the apricot’s natural tartness as we did with the Gose, we’ve decided to highlight the sweeter characteristics of this stone fruit in order to create our first Milkshake beer of the year, YY*->IST , a moderately sweet, well-rounded, slightly spicy IPA with a subtle, yet lasting, velvety mouthfeel.

We conditioned the beer on Madagascar’s Bourbon vanilla beans, which provide the beer with a rich and almost silky flavour and aroma. To balance things out, this beer was lightly dry-hopped with Galaxy and Vic Secret, which give this beer aromas of citrus (grapefruit), herbs, and spice. The resulting beer is a refreshing, lightly sweet, creamy IPA.

YY*->IST will be available on Friday, February 22nd at 5 PM in our Bottle Shop and on tap in our brewpub.
