Cloudy with a Chance of Hops: Introducing CLOUD (IPA, 6.8%)

It shouldn't come as a surprise that our beer lineup looks considerably different from when we first opened in 2016. Some beers have evolved thoroughly, while some have been completely dropped from our menu to make room for newer styles. As brewers, we’re always open to switching things up but we really stick to making the kind of beers we like to drink. We have a certain affinity for IPAs and we're constantly in the process of developing new versions of the style or perfecting our already existing recipes. The evolution of our IPAs really started with our Cone Ranger (our very first beer!), a beer that was changed to our drier and hop-forward Dundas West Coast IPA. Since then we've seen variations on the style with some DIPAs (Tsarina Bomb) as well as some hazier versions like Juicebox and Dundas East Coast IPA. This week we take our IPA game in a different direction with the introduction of CLOUD, a hazy, extra-juicy and intensely aromatic new beer with a pillowy soft mouthfeel and bursts of tropical and citrus flavours.

For this new IPA we made some slight modifications in the malt bill, adding a huge amount of oats to provide extra haziness and a creamy mouthfeel. CLOUD was double dry-hopped using Galaxy, Citra, Summer, and El Dorado, resulting in a beer bursting with aromas of mango, stone fruit, and a subtle hint of citrus. A hint of lingering bitterness balances out some of the sweet “fruitiness” of the beer, keeping you wanting just another sip.
